ENSALADA DE REMOLACHA {BEETROOT SALAD}

De nuevo me quedo corta con el título por cuestiones de sitio siempre. En realidad esta ensalada de remolacha lleva un ingrediente que le va como anillo al dedo, naranjas. Bueno y otras muchas cosas, con un aliño buenísimo. Mis catadores casi me dejan sin ensalada y eso si es una buena señal.

ENSALADA DE REMOLACHA Y NARANJA
PARA 4 PERSONAS
1 kilo de remolachas
2 naranjas
Para el aliño
Medio vaso de aceite de oliva
5 cucharadas de vinagre de manzana
Una cucharada de miel
Un puñado de pasas
Un puñado de nueces o avellanas
Un puñado de piñones
Sal y pimienta para sazonar

PROCEDIMIENTO
1. Cocer las remolachas. Se pueden comprar cocidas directamente pero a mí me gusta más cocerlas en casa en la olla rápida (5min). Se pelan, con unos guantes porque lo tiñen todo y se cortan en lonchitas finas. Se coloca en una fuente de servir. Se reserva.
2. Pelar las naranjas y cortarlas en gajos sin el pellejo. Añadir a la remolacha
3. Machacamos con el mortero las nueces o avellanas
4. Hacer la vinagreta con el aceite de oliva, el vinagre y la miel. Incorporar las pasas y los piñones.
5. Añadir todo el conjunto anterior al mortero. Mezclar todo bien.
6. No hay que echar el aliño hasta el momento de servir porque la remolacha lo tiñe todo.

BEETROOT AND ORANGE SALAD
INGREDIENTS SERVES 4
1 kg of beetroots
2 oranges
For the dressing
1 cup of olive oil
1 tbsp honey
5 tbsp cider vinegar
1 handful of raisins
1 handful of nuts or hazelnuts
1 handful of pine nuts
Salt and pepper to season

METHOD
1. Boil the beetroots in water. I´ve boiled them in the pressure cook during 5 minutes. You can buy them already boiled but I don´t like them so I use the ones I buy in the farmer market. When cool, peel them, with gloves because they dye everything they touch, and finely slice them after. Arrange them on a serving plate and reserve.
2. Peel the oranges and cut them into wedges without the skin. Arrange them with the beetroot.
3. Crush the nuts or hazelnuts in a mortar and pestle.
4. To make the dressing, add the olive oil, the vinegar and the honey into a bowl. Mix well. Add the raisins and the pine nuts.
5. Pour the dressing into the morter and pestle and mix it with the nuts.
6. Don´t add the dressing before you are all sat at the table, the beetroot dyes everything.

  1. A veces es complicado resumir en un puñado de palabras todo lo bueno de una ensalada. Incluso hay ocasiones en que una imagen no vale más que mil palabras y hay que recurrir al sentido del gusto para entenderlo.

    Lástima que a través de internet no podamos (aún) degustar ni oler, o quizá sea una suerte porque ese día engordaremos varios kilos nada más que visitando blogs.
