AJOBLANCO

Cuando pienso en Ajo blanco, siempre me pasa que solo me acuerdo de un sitio en Marbella donde lo preparan que te mueres, La Navilla. No tengo duda de que habrá mil sitios que lo hacen delicioso, pero como fué aquí donde lo probé por primera vez, me parece si no el mejor, al menos de los mejores. Si estás con Malagueños, te dirán que el ajo blanco es 100% de Málaga. Si estás con Cordobeses, como Miguel y Manuel de la Navilla, te dirán que de Malagueño nada, que es Cordobés. Yo me quedo con que es patrimonio de Andalucía, como el gazpacho y el salmorejo. ¡Qué buenas estas sopas frías que nos trae el verano!. Yo hoy os dejo la receta de ellos, que es la que a mí me gusta y la que yo hago en casa, eso sí, utilizando almendra marcona cruda sin tostar porque es una almendra buenísima. Por lo demás, el ajoblanco no tiene ningún misterio. Desde luego hoy en día con los aparatos que tenemos lo hacemos en un momento. Se puede servir también en chupitos como aperitivo antes de una comida.
  1. When I think about "ajo blanco", which is a cold soup made with almonds, I can remember just one place where they make one you could die for, La Navilla - Marbella. I have no doubt that there are many places where they make gorgeous recipes, but this is the place where I had it for the first time. I personally think if not the best at least one of them. If you happen to be with people from Malaga, they would say ajo blanco is a recipe from Malaga and if you´re with people from Cordoba they will say it´s basically from that area. I prefer to say it´s something that is Andalucían Heritage, the same way for me it´s gazpacho or salmorejo. I love cold soups in summer!. I´m going to share this recipe from this restaurant, which is the one I like most and the one I make at home. I always use almonds marcona type, raw, because it´s a wonderful product. A blender or a food processor makes this process much easier nowadays. You could also serve it as a starter in shot glasses before lunch.

AJO BLANCO
INGREDIENTES PARA 6 PERSONAS
200 gramos de almendras sin tostar
2 dientes de ajo, pelados
250ml de aceite de oliva refinado y muy suave
50ml de vinagre blanco suave
100 gramos de migas de pan blanco, si es cateto y del día anterior mejor
Una clara de huevo. Se usa para que no se separen los ingredientes
Sal
1,3 litros de agua muy fría

PROCEDIMIENTO
1. Ponemos a remojo el pan, pero utilizamos un vaso de esos 1,3 litros de agua que tenemos. Lo segundo que hay que hacer, es moler la almendra hasta la saciedad, digo hasta la saciedad porque hay que dejarla como polvos de talco. Lo hago con una picadora y tardo unos 15 minutos en hacerlo. Las que tienen un aparato mejor, pues perfecto. Paciencia.
2. Cuando ya tenemos lista la almendra, en una batidora de vaso colocamos la miga de pan, la almendra, añadimos el vinagre, la clara de huevo, la sal y un poco de agua para que se pique todo bien. No apagamos el vaso batidor.
3. Cuando vemos que está todo ya bien picado y unificado, si hiciera falta añadiríamos un poco más de agua, empezamos a añadir el aceite como si fuera para una mayonesa, hasta terminarlo.
4. Para terminar, añadiremos el agua que nos queda y rectificaremos de punto de sal y de vinagre si hiciera falta. Comprobar la consistencia de la sopa, debería quedar como si fuera nata líquida.
5. Lo mejor para acompañar, unas bolas de fruta, almendra fileteada, unas gotitas de aceite de oliva, uvas... Yo lo he acompañado con unas bolas de melón y una bola rosa que en realidad es de sorbete de higo.
6. Servir y tomar muy frío.

AJO BLANCO - SERVES 6
INGREDIENTS
200gr blanched almonds, I use marcona type
2 garlic cloves, peeled
250ml Olive oil, soft not a very strong virgin olive oil
50ml white vinegar, a good one
100gr bread, minus crusts, if it´s one day old country bread much better
1 egg white. I use it so the ingredients never separate from each other.
Salt to season
1,3 litres of very very cold water

METHOD
1. Put the bread in a bowl, cover with some cold water from the 1,3 litros we have. Leave to soak while we grind the almonds. Now, this is the second thing you need to do, grind the almonds in a grinder as if there were no tomorrow. I say this, because you have to leave the almonds as if they were talc powder. I spend at least 15 minutes doing this. If you have any other device, perfect.
2. Now, in a food processor add the almonds, the soaked bread, blitz them chunk by chunk until you get a thick paste, add the vinegar, the cloves of garlic, the egg white, the salt and a glass of the cold water we have. Blend all. Don´t turn the food processor off.
3. With the motor running, gradually trickle in the oil, so it emulsifies with the almonds mixture as if it was a mayonnaise until you finish all.
4. To end, add the rest of the cold water you have reserved. Check if it needs more salt or more vinegar, colder food needs more seasoning. Check the consistency of the soup, it should be like single cream.
5. The best way to serve it is with some pieces of fruit, sliced almonds, some drops of olive oil,  grapes.... I´ve put some melon balls and a pink ball which actually is fig´s sorbet.
6. Serve and keep it cold.

Para el sorbete de higo. He usado 400 gramos de higos, 75ml de agua, 50 gramos de azúcar y zumo de medio limón. He pelado los higos, los he triturado. He hecho un almíbar con el agua, el azúcar y el limón y lo he mezclado al puré de higos. Lo he puesto todo en un recipiente metálico y al congelador. Lo he rallado con un tenedor varias veces cada 20 minutos. ¡LISTO!.
  1. For the fig´s sorbet. I´ve used 400gr of figs, 75ml water, 50gr of sugar and the juice of half lemon. I´ve peeled the figs, processed them in a food processor. I made a syrup with the water, sugar and lemon and combine it well with the fig´s purée. I put the mixture in a tin and into the freezer. I scratch it several times with a fork every 20 minutes. DONE!.

Qué delicioso todo! una crema fresquita y llena de sabor como el ajoblanco y un sorbete de higo, no puede ser más de verano, todo un lujo...es una tontería pero yo cada vez que leo ajoblanco me acuerdo de Lola de Almería, jajajaja, ya lo tengo guardado así en mi cabeza, jajajajaja...Besos guapa

  3. Desde luego el ajo blanco es de Málaga como el salmorejo es de Córdoba y el gazpacho de toda Andalucía,la Porra por supuesto de Antequera,Málaga.De hecho el ajo blanco puro se acompaña de la uva moscatel de Málaga.
