ENSALADA CON POLLO, MANGO Y MÁS {CHICKEN AND MANGO SALAD}

Aquí vengo corriendo, llego de vacaciones el sábado y tarde, y pensando que me iba a librar para la mesa electoral ¡pues no!, así me pasé el domingo ayer, vamos ideal, así que sin parar, os dejo otra receta de las raras pero buenísima y muy refrescante. No es que me la haya inventado yo, no no, es una ensalada que tengo guardada de una revista desde el  2012, pero la he hecho y hoy os lo cuento. Me ha encantado. Un mensaje para esos amigos que tengo que mezclar el chorizo con la ensalada les pareció raro, jeje. Pues hala, aquí les dejo otra.
  1. Would you like to have a completely different salad I´ve tasted today?. Well it´s not that I invented it myself, no way, I have it in my folders since 2012, but I made it today and I´m here to tell you about it. I simply loved it. I´m dedicating this salad to those friends of mine who thought mixing chorizo with other ingredients in a salad sounded a bit weird. Well then, here you go, see if you like this one better.
La verdad es que el tiempo no está como para muchas ensaladas, pero en mi casa si pongo ensaladas como entrante para que todo el mundo picotee ¡no falla!, todo el  mundo se la come.
  1. I must say the weather we´re having is not the best for salads, but I´ve known for many years now, that if I put salads on the table before anything else, my family devoure them.
ENSALADA DE POLLO CON CURRY Y MANGO
INGREDIENTES PARA 2 PERSONAS
1 pechuga de pollo cortada en tiras
2 cucharadas de aceite de oliva virgen
2 cucharaditas de curry en polvo
4 cucharadas de yogurt Griego
1 mango
1 cucharada de chutney de mango (yo no se la he puesto, por lo de las calorías)
Cáscara de lima
El zumo de media lima
2 cogollos
1/2 cebolla roja
2 cucharadas de semillas de sésamo

PROCEDIMIENTO
1. Lo primero que hice fué poner el pollo cortado en tiritas en una bolsa de plástico con el aceite y 1 cucharadita de curry, la otra la utilizaremos más tarde. Lo dejé en el frigorífico durante 1 hora para que cogiera bien todos los sabores. Mientras tanto, precalentar el horno a 180ºC.
2. Pasada la hora, colocar la pechuga en una fuente de horno y hornear durante 15 minutos. Dejar enfríar.
3. Hacemos la salsa para la ensalada. Mezclamos el yogurt Griego con la cucharadita de curry que nos quedaba, el chutney de mango si se usa, la cáscara de lima y el zumo, si la salsa nos parece demasiado espesa, se puede añadir una cucharada de agua para aligerar, yo no se la he añadido.
4. Saltear en una sartén las semillas de sésamo hasta que están doraditas.
5. Para servir, vamos colocando primero las semillas y las hojas de los cogollos separadas. Seguimos con el mango, luego el pollo, echamos por encima la salsa y terminamos con un poco de cebolla roja.
Estaba buenísima. La repetiré seguro.

CURRIED CHICKEN AND MANGO SALAD
INGREDIENTS  SERVES 2
1 chicken breast cut in stripes
2tbsp extra virgin olive oil
2tsp curry powder
4tbsp Greek yogurt
1 mango, peeled and cut in slices
1 tbsp mango chutney, I didn´t use it because I´m trying to reduce the calories.
Zest of 1 lime
Juice of half lime
2 little Gem lettuce, leaves separated
1/2 red onion, cut in slices
2 tbsp toasted sesame seeds

METHOD
1. The first thing I did was to put the chicken inside a plastic bag with the olive oil and 1 tsp of the curry, we will use the other one later. I left this bag in the fridge for 1 hour so the chicken gets all the aroma from the curry. Meanwhile, preheat the oven to 180ºC.
2. When it´s done, put the chicken in an oven proof dish and cook in the oven for 15min.
3. Make the dressing. In a bowl, combine the remaining curry powder with the yogurt, chutney, if used, and lime zest and juice. Add 1tbsp of water if the dressing is a little thick, I didn´t have to.
4. Sauté the sesame seeds in a frying pan until golden.
5. To serve, arrange the sesame seeds, the lettuce leaves, then the mango slices and cooked chicken, then drizzle with the dressing and finally scatter with the red onion before serving. It was gorgeous. I´m going to make it again soon.

Reina del norteee!! me imagino que ya bajaste el ritmo, ¿o esto sigue? menuda ensaladota, eh, y no solo porque tiene mango, que sabes que yo soy muy fan de todas las mezclas creativas habidas y por haber... y es que si pillo un buen mango, esta cae, que ya el aguacate está en su punto para la anterior!! jajaja
