NATILLAS o CREMA PASTELERA {CUSTARD CREAM}

Tenía esta receta pendiente desde que dije que iba a escribirla, aquel día de verano que hice los melocotones asados, (aquí). Pues aquí la dejo, a mí me pasa que hago alguna cosa muchas veces y no le doy la importancia que se merece. Este es un superpostre. He hecho las dos versiones, la primera gordita, de las de cuchara y la segunda bebida, porque donde yo he nacido (en Eibar), se beben, y mi madre siempre las ha hecho bebidas....deliciosas.
  1. I had to post this recipe long ago, that day I said to the ones who follow me I was going to write it, that summer day I posted the roasted peaches everybody loved, (here). So here it is, I guess when I make something many times, I think it´s not an important recipe to post but believe me, this is a super dessert itself. I´ve made two versions of it, one thick, to eat it with a spoon. The other one to drink, because where I was born (Eibar), we drink it, my mom has always made them this way.....gorgeous.
INGREDIENTES para 2 litros de natillas
1 litro de leche entera
1 rama de canela
8 yemas de huevo
40 gramos de maizena
200 gramos de azúcar
1 litro de leche entera para añadir después

  2. 1litre whole milk
  3. 1 cinnamon stick
  4. 8 egg yolks
  5. 40gr cornflour
  6. 200gr sugar
  7. 1litre whole milk to add later

PROCEDIMIENTO - METHOD
Lo primero que hay que hacer es poner a hervir litro de la leche con la canela y dejarla que repose un ratito para que la leche coja todo el sabor del palito. 
  1. First thing to do is to boil 1 litre of the milk with the cinnamon stick. Let it rest a bit afterwards so the milk gets all the flavour from the stick.
Mientras tanto, se pone en un bol las yemas con el azúcar y se baten con una batidora de varillas, si es eléctrica pues mucho mejor. Partiendo de este color..........
  1. In the meantime, put together the egg yolks and the sugar and whisk together, well if the balloon whisk is electric, much much better. It will change colour, from this one............
hasta que coge este color y este punto.
  1. until it gets this thick and with this colour.
Añadir la maizena y batir un poco más. Volver a poner la leche a hervir, y cuando esté hirviendo, echarla en el bol con la mezcla de huevos, azúcar y harina. Hervirla durante 2 minutos. Añadir medio litro de leche fría, y revolver. Distribuir en cuencos, así tendremos la crema "gordita".
  1. Add the cornflour and whisk a bit more. Bring the milk to boil again and when it´s boiling, gradually pour the hot milk into the bowl, with the eggs, sugar and flour mixture. Cook it 2 minutes more. Add half litre of cold milk and combine well. Pour some of this cream into bowls or cups. When cold this will be the thick cream.
Para que no se quede esa nata gorda mientras se enfría, yo le pongo un plástico de cocina haciendo contacto con la crema. Cuando se enfríe se retira y ya está.
  1. Cover the surface with clingfilm so it doesn´t form a thick coat on it. When it´s cold, simply remove the clingfilm.
A la crema que queda en la cazuela, le añadimos el otro medio litro de leche fría que nos queda, revolvemos bien (ahora vemos que es mucho más ligera que la anterior) y la metemos en una jarra y directamente al frigorífico. Tendremos unas natillas para beber.
  1. Add the other half litre of milk left to the cream left in the pot, combine well (now you can see the cream obtained is much lighter than the other one). Pour it in a jug and keep it in the fridge, so this is the custard to drink.
Mi madre siempre aprovecha la clara para hacer "suspiros" (les llama así), y es lo que he puesto en las natillas de cuchara. Batir y batir la clara.....y añadir una cucharadita. En mi casa les chifla.
  1. My mother always uses the egg white to make "sigh" (that´s the way she calls them), that´s what I´ve done with the egg white myself. Whisk and whisk the egg white, and when done...add a tbsp to the custard cream. My family loves that.

  1. A mi las natillas me salen líquidas también. Siempre hago la misma receta, de un libro de repostería pues debe ser de tu ciudad porque ya ves jaja.

  5. Que buenas te han quedado guapa!! en casa siempre las hemos tomado con cuchara, pero las más claritas para beber tienen que estar maravillosas, fresquitas tienen que ser un gustazo, no dejaré de probarlas en casa nos encantan...Bess

  6. Pues mira, no sabría con cual quedarme, porque las dos tienen muy buena pinta, creo que me voy a quedar con las dos y si no hay, guardame por lo menos una para el postre de mañana, jejeje, besos
