MAS QUE ENSALADAS {MORE THAN SALADS}

No solo vivimos de ensaladas en verano. El tiempo en el norte no es tan caluroso, pasar un día en la playa o en la piscina siempre abre el apetito, con lo que un plato de cuchara o de salsa siempre es muy bien recibido.

We not only live on salads in summer. The weather where I live is not so warm as in other parts of Spain, so we have the opportunity to eat those recipes which are more typical in the winter, but I must admit that to spend a day at the beach or in the pool when the weather is good,  makes everybody hungry, so sometimes comfort food works just fine and it´s always welcomed.

ENSALADILLA RUSA Y LENGUA EN SALSA / ENSALADILLA RUSA AND BEEF TONGUE IN SPANISH SAUCE

*Ensaladilla rusa,  is basically a potato salad with other ingredients like carrots, hard-boiled eggs, peas, gerkins, olives, asparagus, very well chopped and mixed up with home made mayonaisse. You can add or remove any ingredient you prefer or you don´t like.

INGREDIENTES
3 patatas cocidas
2 huevos duros
2 zanahorias cocidas
8 pepinillos en vinagre
1 lata pequeña de guisantes extra-finos
Mayonesa casera

INGREDIENTS
3 potatoes, boiled
2 hardboiled eggs
2 carrots, boiled
8 gerkins
1 small tin of peas, extra fins
Home made mayonaise

PROCEDIMIENTO/ METHOD
Picar bien todos los ingredientes y mezclarlos con la mayonesa.
He cocido 6 huevos y los he rellenado con la mezcla para tomarlos como primer plato. 

Chop the potatoes into cubes, and the rest of the ingredients and combine them very well with the mayonaisse.
I´ve hard-boiled 6 eggs, and I´ve stuffed them with the potato salad and served them as a starter.



He usado las yemas de los huevos cocidos para decorar.

I´ve used the hard-boiled egg´s yolks to decorate them.





No falla, todo el mundo come huevos rellenos de ensaladilla.

Everybody ate these, they were really good.



INGREDIENTES PARA LA LENGUA
1 lengua de vaca
2 huevos batidos
2 puerros
2 zanahorias
Harina 
Aceite de oliva para freír
Salsa Española

INGREDIENTS FOR THE BEEF TONGUE
1 beef tongue
2 beaten eggs
2 leeks
2 carrots
Flour
Olive oil to fry the fillet
Spanish sauce 


PROCEDIMIENTO - METHOD
En una olla a presión cocer la lengua junto con las verduras durante 1 hora. 
Dejar enfríar bien y cortar en lonchas.

In a pressure cook, cook the beef tongue with the veggies for about 1 hour.
When it´s cold, slice it.


Cubrir los filetes con harina y después pasarlos por huevos batidos. Freír.

Place the flour onto a plate, then dredge each tongue fillet in the flour. Dip them in the beaten eggs. Deep fry them in olive oil until gold.



Servirlos con la salsa española y un puré de patatas. Yo a veces simplemente la hago con patatas fritas y sin salsa que queda fantástica.

Serve it with the "salsa española" and a potatoes puré. I sometimes serve it with french fries as a sidedish and without the sauce, and the recipe is also great.



En mi casa este plato nunca sobra.

I never have leftovers of this recipe.

  2. Ay, qué rica la ensaladilla rusa. Y así, para rellenar unos huevos cocidos, fantástica. Y esa lengua fileteada y acompañada de salsa española, un auténtico manjar. Está riquísima. En casa la hemos hecho alguna vez.

  3. Hola guapísima, menudo menú de lujo, mi abuela solía hacerla, la lengua, pero yo todavía no me he atrevido en casa no se la comerían sabiendo que es, espero que todo vaya bien, muchas veces hay que ponerse el capote por montera y a por todas preciosa, mis oraciones están contigo, besos

  4. No he comido nunca la lengua de vaca pero los huevos rellenos me encantan ^.^ eso si, los míos sin pepinillo jaja Un menú estupendo, que pases un buen día :)

  5. Querida amiga, unos huevos ricos de verdad y con una presentacion de cine, y esa lengua en salsa tiene que estar de escandalo me han encantado las dos cosas, Espero que todo este bien. Un abrazo guapa.
