CREMAS DE CHOCOLATE {CHOCOLATE CREAMS}

Cuando Nigella habla de este postre, se refiere al mismo como la felicidad pura y absoluta. Yo personalmente creo que el chocolate siempre será chocolate, con felicidad o sin ella ya que en algunos casos está presente en los momentos de la mas absoluta desesperación. 

When Nigella speaks about this dessert in her book, she talks about pure, all-encompassing bliss. I personally think that chocolate will always be chocolate, with perfect happiness or without it, because sometimes chocolate is also present in moments of despair, when everything seems to be going wrong.


CREMAS DE CHOCOLATE - CHOCOLATE CREAMS (PUDDINGS)
INGREDIENTES PARA 4 PERSONAS
250ml de leche entera
125ml de nata líquida
60g de azúcar
1 cucharada sopera de harina de maíz
35g de cacao en polvo
2 cucharadas soperas de agua hirviendo
2 yemas de huevo
1 cucharadita de extracto de vainilla
60 gramos de chocolate negro (mínimo 70% cacao), troceado fino

INGREDIENTS - SERVES 4
250ml full-fat milk
125ml double cream
60g caster sugar
1 tablespoon cornflour
35g cocoa powder
2  tablespoons boiling water
2 egg yolks
1 teaspoon vanilla extract
60g dark chocolate (minimum 70% cocoa solids), finely chopped.

PROCEDIMIENTO - METHOD
Poner la leche y la crema en una cazuela y hervirlas juntas. Se pueden poner también en el microondas.

Put the kettle on, and warm the milk and cream together in a saucepan or in a bowl in the microwave. 


En otra cazuela, tamizar el cacao, la harina de maíz y el azúcar. Añadir 2 cucharadas de agua hirviendo y mezclar bien hasta formar una pasta.

Put the sugar and cornflour into another saucepan and sieve in the cocoa powder. Add the 2 tablespoons of boiling water and whisk to a paste.




Incorporar las yemas de huevo, una a una, seguidas de la leche y la crema calientes con el extracto de vainilla. Limpiando bien los bordes de la cazuela, llevarla a ebullición durante 3-4 a fuego bajo, hasta que la mezcla espesa.

Whisk in the egg yolks, one at a time, followed by the warmed milk and cream, then the vanilla extract.
Scrape down the sides of the pan and put it on a lowish heat, cooking and whisking for about 3-4 minutes until the mixture thickens to a mayonnaise-like consistency.


Antes de repartirla en los recipientes quitarla del fuego e incorporar el chocolate picado finamente.

Take off the heat and whisk in the finely chopped chocolate, before pouring into 4 small cups or glasses.


Cubrir el chocolate con plástico de cocina, en contacto con el chocolate para que no se le forme una "costra". Colocarlos en el frigorífico, aunque habrá que sacarlos una hora antes de comerlos.

Cover the tops of the cups or glasses with clingfilm, letting the clingfilm rest on the chocolate surface, to stop a skin forming, and refrigerate once they are cooler. Make sure they are not still fridge-cold when you serve them.




Se puede añadir una cucharada encima del chocolate si se quiere.

You can add a blob of cream on top if you like.

  1. Mª Luisa, me gustan mucho las cositas de Nigella, son sencillas pero siempre sorprendentes. Aún no he podido comprar su libro así que esta recetita me viene genial porque te la pienso copiar jeje. Por cierto, te ha quedado precioso servida en esas tacitas. Un besico guapa.
