SOUFFLÉ DE BERENJENAS {AUBERGINE´S SOUFFLE}

Además de tener en mi despensa patatas, arroz y huevos junto con los ingredientes básicos de una cocina, la berenjena creo que siempre está presente.

I must say, besides the basic ingredients like potatoes, rice and eggs, aubergines are always present in my fridge.


SOUFFLÉ DE BERENJENAS - AUBERGINE´S SOUFFLE


INGREDIENTES PARA 6 PERSONAS
2 berenjenas
2 cebolletas
100 gramos de bacon ahumado
4 cucharadas de tomate frito
3 huevos, separadas claras de yemas
40 gramos de mantequilla
40 gramos de harina o pan rallado
4dl de leche entera
Sal y pimienta para sazonar

INGREDIENTS - SERVES 6 RAMEKINS
2 Aubergines, cut in small pieces
2 spring onions, chopped
100gr smoked bacon
4tbsp tomato sauce
3 eggs, separated yolks and whites
40gr butter
40gr flour
4dl whole milk
Salt and pepper to season.

PROCEDIMIENTO - METHOD
Picar las cebollas y rehogarlas en aceite. Picar las berenjenas y añadirlas a la sarten donde están las cebollas. Saltearlas.

Chop the onions and sautée them in olive oil. Cut the aubergines and add them to the saucepan where the onions are cooking. Sautée the aubergines with the onions.


Cuando las berenjenas están hechas, picamos el bacon y se lo añadimos.

When the aubergines are cooked, chop the bacon and add it to the saucepan.


Añadir el tomate y sazonar con sal y pimienta.

Add the tomato sauce, season with salt and pepper.


Hacer una bechamel con la mantequilla, la harina y la leche. Incorporar la mezcla anterior a la bechamel.

Make a bechamel sauce with the butter, the flour and the milk. Combine the ingredients above with the bechamel sauce.


Añadir las yemas de los huevos, batidas.

Add the egg yolks, beaten.


Preparar los moldes para souffle, que sean rectos para que suban mejor. Untarlos con mantequilla y espolvorearlos con pan rallado.
Precalentar el horno a 200º.

Prepare the ramekins, rub them with butter and pour some breadcrumbs so the souffle doesn´t stick.
Preheat the oven to 200ºC


Montar las claras a punto de nieve, y con una espátula de metal, mezclarlas con la bechamel y la berenjena. Primero incorporar una cucharada, hasta aligerar la mezcla y después incorporar el resto cuidadosamente para que no pierda el aire. Distribuirla entre los 6 moldes.

Beat the egg whites in a large, clean bowl until stiff, then, using a large metal spoon, fold one spoonful into the spinach sauce to 'loosen' it. Now carefully fold the remaining egg whites into the aubergine mixture before dividing it equally between the 6 ramekins. 


Hornearlos durante 15 minutos.

Bake them during 15 minutes.



Los soufflés, deben servirse directamente del horno cuando están calientes y esponjosos.

The soufflés need to be served hot and puffy from the oven, 



Y alguien que conocemos,  me ha dicho que me sigue y me ha mandado unas flores a través de un correo muy cariñoso....le tengo que contestar, es alguien a quien hemos tenido mucho cariño cuando éramos pequeñas, ahora no nos vemos,  que siempre nos parecía maravillosa y nos encantaba que viniera a visitarnos.

  3. Mª Luisa, te ha quedado estupendo, La berenjena también es una verdura que uso mucho en casa aunque esta receta tengo que guardarla para prepararla más adelante. Mi horno está pidiendo a gritos la jubilación y me juega malas pasadas como elevar su temperatura a 300.000 grados en mitad del horneado jeje así que hasta que no tenga uno nuevo creo que no podre probar esta delicia. Besicos.

  4. Me parece una delicia de receta, me encantan las berenjenas, en casa las comemos mucho, hay muchas maneras de prepararlas, esta la tengo que probar porque me ha fascinado
