CROQUETAS DE SOLOMILLO {BEEF TENDERLOIN CROQUETTES}

Un filete de solomillo en el frigorífico y nadie se lo iba a comer. Ya lo tengo decidido, lo cortaré en cachitos pequeños y haré croquetas. Podía haberlo congelado, pero limpio el congelador por estas fechas y no tenía intenciones de dejar nada dentro. Seguro que las croqu}etas van a salir buenísimas con este filete y no hay nadie en mi casa que haga "ascos" a un plato de croquetas.

A lonely tenderloin steak is what I had left in the fridge when we were going to leave before Christmas to go to my mom´s, nobody wanted to eat meat that day so I made up my mind and chopped it by hand into small pieces. "Great! I thought, I´ll make croquettes with this steak", I was sure at least everybody will jump into a plate full of croquettes for dinner. I could have frozen it, but I always clean my freezer at this time of the year,  so I didn´t want to leave anything inside.



CROQUETAS DE SOLOMILLO - BEEF TENDERLOIN CROQUETTES

INGREDIENTES - UNAS 25 CROQUETAS
1 litro de salsa bechamel (Mantequilla, harina y leche entera)
1 filete de solomillo
Sal
Pimienta
Pan rallado
2 Huevos batidos
200 gramos de harina
Aceite de oliva para freir

INGREDIENTS - FOR 25 CROQUETTES
1 litre of basic bechamel sauce (butter, milk and flour)
1 tenderloin steak
Salt
Pepper
Breadcrumbs
2 Beaten eggs
200gr of flour
Olive oil to fry the croquettes


PROCEDIMIENTO - METHOD

Picar el filete de solomillo.

Chop the beef tenderloin.


Empezar derritiendo la mantequilla lentamente, vigilando que no se vaya a quemar. Cuando lo haya hecho, añadir la harina y formar bolitas. Tostaremos la harina un poco para que la bechamel no sepa a harina. Mover con fuerza para formar una pasta.


Begin by melting the butter gently – don't over-heat it or let it brown, as this will affect the colour and flavour of the sauce. As soon as the butter melts, add the flour and, over a medium heat and using a small pointed wooden spoon, stir quite vigorously to make a smooth, glossy paste.




Empezar a añadir la leche poco a poco. Seguir removiendo "con alegría". Cuando la leche vaya desapareciendo, seguir añadiendo hasta llegar casi a terminar el litro.

Now begin adding the infused milk a little at a time and stir again vigorously. Then, when this milk is incorporated, add the next amount and continue incorporating each bit of liquid before you add the next.



Bajar el fuego y cocinar la salsa durante unos 5 minutos. Añadir la carne, la sal y la pimienta recien molida. Las croquetas de carne son mis favoritas.

Now turn the heat down to its lowest setting and let the sauce cook for 5 minutes, whisking from time to time. While that's happening, taste and season with salt and freshly milled black pepper. Add the meat as well. Meat croquettes are my favourite, no doubt.



Cuando era pequeña, y veía a mi madre hacer bechamel,  siempre me gustaban los agujeritos que se formaban en la bechamel cuando estaba cociendo lentamente. Parecía el cráter de un volcán.

When I was little, and observing my mom cooking bechamel sauce,  I always liked the small holes that were formed when the bechamel was cooking slowly. They looked like a volcano crater.



Echar la bechamel en una fuente, y cubrirla con plástico de cocina para que no se le forme una costra.

Pour the bechamel onto a tray. To stop a skin forming on the sauce, cover with clig film.


¡PRECAUCIÓN!
Procurar que no quede nada en la cazuela, nadie debe meter los dedos dentro. Se podría empezar una batalla por culpa de quién come mas bechamel de la cazuela.

WARNING!!!
Try not to leave any rest of the bechamel sauce in the pot. Nobody should lick that. A war could start between the ones putting the fingers inside.




Dar forma a las croquetas, pasándolas primero por harina, luego por huevo batido y después por pan rallado.

Mould the mixture, pressing firmly to bind them together. Sprinkle some flour on to a board and roll each croquette in it so they are all lightly dusted with flour. Roll them then into the beaten egg and again into the breadcrums.



Freírlas en aceite de oliva, girándolas para que se doren por todos lados.

Shallow-fry them in olive oil, turning them halfway, to a light brown colour.



¡Comerlas ya!.

You can eat them now!.


Las croquetas siempre serán croquetas.

Croquettes will always be croquettes.
