PENSANDO EN HIGOS {THINKING ABOUT FIGS}

Pensando en los higos que no me puedo comer, me encantan, los comíamos cuando éramos pequeños en la higuera que teníamos en la casa de la Rioja y ahora que ya estamos terminando la temporada voy a dedicarles al menos un post. Esta fruta maravillosa, con su piel verde o púrpura tan fresca y con un interior de sabor profundo, desde luego perfectos para el comienzo del otoño. Además, va increíblemente bien con sabores salados como el jamón serrano.

Thinking about those figs I shouldn´t eat and that I love so much. We used to eat them when we were small,  from the tree we had in that house in La Rioja, and now their season is almost over, I had to dedicate them at least one post. This striking fruit, with its fresh green or deep purple skin and vibrant deep pink flesh, is a wonderful addition to the autumnal table. Figs have a naturally high sugar content, making them an ideal match for equally intense ingredients, such as salty jamón serrano.

TARTALETA DE HIGOS CON JAMÓN SERRANO Y EL BOCADILLO FAVORITO DE MI I.  -  FIGS TARTELETTE WITH JAMÓN SERRANO AND MY I.´s FAVOURITE SANDWICH.

INGREDIENTES PARA 4 PERSONAS
Masa de hojaldre comprada en el supermercado
8 higos frescos
4 lonchas de jamón serrano
1 mozzarella de búfala
Vinagre de Módena
Rúcula
Huevo batido para pintar el hojaldre

INGREDIENTS - SERVES 4
Ready made puff pastry
8 fresh figs
4 slices of serrano ham
1 ball of mozzarella
balsamic vinegar
Arugula
Beaten egg to paint the puff pastry

PROCEDIMIENTO - METHOD

Precalentar el horno a 200º.

Preheat the oven to 200º.


Cortar los higos en cuartos.

Cut the figs in quarters.



Preparar la tartaleta. Formar un rectángulo y poner unas tiras en las esquinas para que cuando hornee suba el doble.

Prepare the tartelette with the puff pastry. Form a rectangle and put the leftovers over all the rectangle.


Oh, écharme la culpa de que no haya más fotos, pero estaba hablando por teléfono con mi amiga Ch. en este punto exactamente, y no he sacado las fotos que tenía que sacar. Se lo he dicho que le iba a mencionar.

Oh, blame me for not taking the step-by-step pictures in here. I was on the phone with my dearest friend Ch. and I missed this moment and completely forgot about it.


De todos modos, se coloca el hojaldre, el jamón, los hijos, se trocea la mozzarella con la mano y ¡listo!. La horneamos durante 20 minutos.

In any case, cut the puff pastry, asemble the serrano ham, the figs, the mozzarella and that´s it. Let´s bake it!. It will be ready in 20m.


Pintaremos el hojaldre con el huevo batido.

We´ll paint the puff pastry with the beaten egg.


Mientras tanto voy a hacer el bocadillo favorito de mi I. 
Hoy viene a casa "corriendo", y se va "corriendo", así que no tenía tiempo ni para comer, pero quería venir a casa.

In the meantime, I´m preparing my I.´s favourite sandwich. Today he couldn´t spend much time having lunch so in 15 minutes he will eat this and leave.


Empiezo pochando 3 cebolletas.

I´m going to sauteé 3 spring onions.


Y cortaré por la mitad una baguette.

And I´ll halve a baguette.


Cuando la cebolla está lista, la pongo sobre un papel de cocina para eliminar el exceso de aceite.

When the onion is ready, I put it on paper so I can get rid of the excess of olive oil.


Le quito al pan la miga interior, y relleno el hueco con la cebolla pochada.

I take out all the crumb and I put the sauteé onion inside.



Y cubrimos la carne con pan rallado y la freímos. Cuando está lista la ponemos en el bocadillo y ¡listo!.

And we´ll dip now the meat in the breadcrumbs and fry it in olive oil. When it´s ready, we simply put it on the other side of the baguette. And that´s it!.




Y volvemos a la tartaleta. Ya está horneada. Le añadimos la rúcula y reducimos el vinagre de módena durante 3 minutos con un poco de azúcar. Lo echo por encima.

Let´s go back to the tartelette. It´s already baked. I´ve scattered some aurugula all over the tartelette and added a 3min reduction with a bit of sugar. I poured it all over it.




¡Servir!.

Serve!.


Y mi I. llegó y comió, y se fué, pero se fué con una sonrisa de oreja a oreja.

And my I. arrived, ate and left, but he did with a broad smile.


Y mi niño llegó de donde estudia, y vió la tartaleta, y me pidió se podía llevarsela. Y la tartaletta duró 5 minutos.

And my boy came from the place he´s studying and saw the tartalette. He asked me if he could take it all, he didn´t have time to have lunch. The tartalette lasted 5 minutes.

  6. Que pintaza tiene todo.
    Nosotros también teníamos una higuera en el pueblo y para estas fechas ala un montón de higos para comer aunque a mi no me gustaban ni ver en esa época.

  8. Pues hoy no sé decirte que es lo que me gusta más. La tartaleta debe estar deliciosa pero ese bocadillito también tiene una pinta estupendo, así que me quedo con los dos. un besazo.
