MI SALSA BOLOGNESA {MY BOLOGNESA SAUCE}

No hago Bolognesa muy a menudo. Ayer,  la hice para mis chicos. Estaban encantados. Esta es mi favorita desde luego, es riquísima.

I don´t make Bolognesa very often. Yesterday I made it for the boys, they were really happy about it. This is very tasty and my favourite.


SALSA BOLOGNESA

INGREDIENTES PARA 4 PERSONAS
60 gramos de tocineta en taquitos
1 cebolla mediana, 1 rama de apio, 1 zanahoria, todo bien picado
4 cucharadas de mantequilla
300 gramos de carne de ternera picada
125 gramos de carne de cerdo picada
125 gramos de carne de salchichas, pelada y desmenuzada
1 diente de ajo
Una pizca de canela en polvo (opcional, yo no se la puse, a los chicos no les gusta)
1 cucharada de pimienta recién molida
1 kilo de tomates enteros pelados (utilicé tomate pera)
1 taza de leche entera

INGREDIENTS - SERVES 4
60g diced pancetta
1 medium onion, 1 stalk celery, 1 carrot, all finely chhopped
4 tbsp butter
300g ground beef
125 ground pork
125 pork sausage (spanish-italian style), peeled and crumbled
1 freshly ground clove
dash of cinammon (optional, I didn´t add it, the boys don´t like it)
1 kg peeled and chopped tomatoes (I´ve used pear tomatoes)
1 cup whole milk

PROCEDIMIENTO - METHOD
En una cazuela, poner la mantequilla y echar la tocineta, la cebolla, el apio y la zanahoria. Pochar bien y cocinar a fuego medio hasta que la cebolla esté bien pochada.

Combine the pancetta, onion, celery and carrot in a sauté pan with the butter and cook over medium heat until the onion turns pale gold.



Añadir las carnes. La ternera, el cerdo y las salchichas y cocinarlas hasta que estén hechas.

Add the beef, pork and sausages and cook until browned.


En ester punto añadir la canela (si se va a echar), el ajo y la pimienta.

Sprinkle with the garlic (grounded), the cinammon (if used) and the ground black pepper.


Añadir los tomates. Yo he utilizado tomates pera pelados. No los he picado, nos gustan los trozos, aunque después de una hora practicamente se deshacen los tomates.

Add the tomatoes. I´ve used pear tomatoes, peeled. I haven´t chopped them, we like them in a rustic way. Besides, after an hour and a half they practically melt in the sauce.



Cocinarlos a fuego medio durante 15 minutos.

Cook them over medium heat for 15 minutes.


Añadir la leche y sazonar con sal. Ponerlos al fuego lento durante 1 hora 1/2, meneando constantemente.

Add the milk and season with salt. Turn the heat down to low and simmer for at least 1 hour and a half, stirring frequently.


Este será el proceso, donde se ve cómo cambia el tomate.

This will be the whole process, Here you can see how the sauce changes.




Especial para unos espaguetis.

This sauce is perfect for spaghettis.


Eso es lo que hice ayer, espaguetis bolognesa.

That´s what I made yesterday, spaghetti bolognesa.


Yo rehogué un poco los espaguetis con mantequilla, pero se puede echar un poco de tomate frito y después añadir la bolognesa. Espolvorear con parmesano rallado por encima. Yo no lo hice por sacar la foto a la bolognesa.

I sautéd the pasta in a little bit of butter first, but you can add some fried tomato first and then put some bolognesa on the top. You can also sprinkle with some grated parmesan cheese. I didn´t do it because I just wanted to take the picture to the bolognese.

  3. ¡Ay que me da algo! Por fin algo que suelo hacer y que puedo mejorar con una receta tuya. Lo de la leche, lo de la carne de salchicha, la zanahoria, la hora y media.... ¡nunca lo he hecho asi! Lo mio debia ser una mierdañesa. jijiji. Besitos, reina mora...

  6. En casa si que comemos boloñesa seguido, casi una vez por semana, aunque de carne solo ponemos ternera. Estaría bien un día probar esta, que se ve divina! Gracias por pasar por mi blog, así he conocido el tuyo, que me parece que, ademas de tener recetas muy ricas, está lleno de cariño!
