ENSALADA DE AGUACATE Y PAWPAW DE LINZI {LINZI´S PAWPAW SALAD}

El estar con la pierna en reposo (una cosa sin importancia) me permite revisar los libros de cocina que tengo y me quedo con éste, que me encanta, porque es como un cuento, una pequeña historia contada con recetas, de los diferentes lugares a donde va la ilustradora que también es cocinera, en Sudáfrica. 
Curiosamente, éste fué el primer libro de Lehla Eldridge, quien actualmente vive en Ciudad del Cabo. 

As I had to be 5 hours this morning with a leg up and resting (nothing important), I was allowed to go over some cooking books I have, and I stopped to look at this one, which I specially like because it´s like a fairy tale through the different places the illustrator, who happens to be a cook too, travels around South Africa.
The South African illustrated Cookbook is Lehla Eldridge´s first book and she currently lives in Cape Town.


Primero, tengo que poner una foto del lugar donde compré este libro. En las bodegas de Zevenwatch (Ciudad del Cabo), impresionante lugar, nadie pensaría que estabamos en Sudáfrica. ¡Qué verdad es que Africa te atrapa y siempre tienes ganas de volver!.


First I have to show you the place where I bought this book. In Zevenwatch vineyards (Capetown), awesome place, nobody would think we were in Southafrica, with such a beautiful landscape. It´s true that Africa "catches" you and you always want to go back and learn everything about it.

Había otros libros mejores probablemente, pero este me gustó por su sencillez y sus dibujos.

There were probably better cookbooks there, but I chose this one because I thought it was beautiful and we liked the drawings.




ENSALADA DE PAWPAW (HE UTILIZADO MANGO), AGUACATE Y ESPINACAS DE LINZI - LINZI´S PAWPAW (I´VE USED MANGOE), AVOCADO AND BABY SPINACH

Esta es una ensalada buenísima de la Nueva cocina Sudafricana con una vinagreta muy sabrosa de Linzi, cocinera que menciona el libro.

This is a lovely New South African salad with a great dressing from Linzi, a fantastic cook.

INGREDIENTES PARA 4 PERSONAS
1 *pawpaw grande o 2 mangos pelados, con el hueso quitado y troceados
2 aguacates, pelados y también troceados
100 gramos de espinacas tiernas
Un puñado de piñones, yo he usado nueces de macadamia
INGREDIENTES PARA LA VINAGRETA
30 ml de *buttermilk
5 ml de mostaza de grano
15 ml de aceite de oliva
15 ml de zumo de limón
2.5 ml de miel
Sal y pimienta en grano para sazonar

INGREDIENTS - SERVES 4
1 Large pawpaw or 2 mangoes, peeled, pitted and sliced
2 avocados, peeled, pitted and sliced
100 g baby spinach
1/2 cup roasted pine nuts (I´ve used Macadamia nuts today)
INGREDIENTS FOR THE DRESSING
2 Tablespoons buttermilk
1 teaspoon wholegrain mustard
1 Tablespoon olive oil
1 Tablespoon lemon juice
1/2 tablespoon runny honey
Salt and ground black pepper, to taste

Hacer la vinagreta.
Make the dressing first.

Echar en un bol el buttermilk* -

Put the buttermilk in a bowl


Añadir la mostaza

Add the mustard


Añadir el aceite de oliva -

Add the olive oil


Y el zumo de limón

And the lemon juice.


Y la miel. Sazonar en este momento con sal y pimienta -

And the honey. At this point, season with salt and pepper to taste.


Mezclar todos los ingredientes y formar una vinagreta espesa.

Mix well all the ingredients together and form a thick vinaigrette.


Poner en el fondo del bol, un poco de la vinagreta.

Put a bit of the vinagreitte in the base of the bowl.


Y colocar las frutas y las espinacas en capas, primero espinaca, luego mango, luego piñones o como en este caso las nueces de Macadamia y después el aguacate. Echar entre las capas de ingredientes la vinagreta.

Place the fruits and the spinach in the bowl, starting with the spinach, and following the mango, then the pine nuts if used (in this case the macadamian nuts), and finish with the avocados. Pour the vinaigreitte between each ingredient so all of them are soaked and infused with it.


Y servir inmediatamente

Serve inmediately

*NOTAS - NOTES
*PAWPAW - El pawpaw (Asimina), un árbusto con hojas grandes que da unos frutos grandes. Posiblemente pertenece a la familia de la papaya.
*PAWPAW - Pawpaw (Asimina) is a small clustered tree, with large leaves and fruit. Probably it derives from the Spanish papaya.

*Buttermilk - Para hacer buttermilk, utilizar una taza de leche entera y añadirle dos cucharadas de vinagre o de zumo de limón. Sin mover, dejarla en reposo durante 5 o 10 minutos. Ya está listo.
