CUANDO LOS HOMBRES COCINAN {WHEN MEN COOK}

No voy a generalizar. Solamente es que ver a mi hermano V. y a mi cuñado S. cocinando es casi un espectáculo. Mejor dicho, no les veo nunca y me ha mandado él estas fotos así que se merecen al menos uno de mis posts.

I´m not going to generalise this subject. It´s only that not even in one occasion I have been able to see my brother V. and my brother in law S. cooking. Well, let´s say this in other words, I haven´t seen them, ever! and he has sent me these pictures and, I´m going to post this for the heck of it.

Los hombres de mi familia cocinan en sociedades gastronómicas. Digamos que solo se ponen los delantales allí.
La característica básica y fundamental de las Sociedades Gastronómicas es ofrecer a sus asociados recreo y descanso en base a la gastronomía. Para ello el local dispone de unas instalaciones cada vez más confortables y, como piezas fundamentales, de una cocina y bodega utilizadas libremente. Los hombres se reúnen allí, cocinan allí y normalmente a las mujeres no se nos permite la entrada a las mismas. Bueno, en algunas si que nos dejan entrar, pero simplemente la mayoría de las veces no vamos.



Men in here cook in gastronomic societies. Let´s say they only wear aprons there.
These are like private clubs with a relaxed atmosphere where the members share a kitchen in which they prepare traditional lunches and dinners.

The oldest societies are strictly for men only, although the more recent ones accept both men and women members. Men meet there, cook,  play mus and have fun. Normally we (women) don´t go.

Así que mi hermano V. me manda estas fotos de la última vez que cocinaron. Estoy segura que la próxima vez que cocinen será de nuevo en otra sociedad. No han querido salir en el blog, respetaré sus caras.



So my brother V. sends me these pictures of the last time they cooked. I´m sure  next time they do it again it will be in another society. They didn´t want to show their faces in my blog, so that´s why I´m covering them up.

Los pajaritos en cuestión son becadas. Las becadas se cazan con perros. No voy a hablar sobre la caza ni sobre los cazadores. En mi familia hay mucha tradición con la caza pero no todos estamos de acuerdo. Los franceses tan apasionados a esta modalidad le llaman MORDOREE ("Mon amour doree" mi amada dorada). Aquí dependiendo de la región se llaman: BECADA, SORDA, OILAGORRA, ... ES LA REINA DEL BOSQUE. (Esto me lo ha dictado V. seguro que con mucha emoción)



The birds are known as woodcocks, in Spanish "becadas". They are hunted with dogs. I´m not going to speak about hunting or hunters. My family has a long tradition of supporting hunting but that doesn´t mean we all agree. French, so passionate about hunting, call this bird "mordoree" which means "mon amour doree", (my golden love). Here in Spain and depending on which zone of the country you are,  we call them Becada, sorda, oilagorra, .....but definately it´s the queen of the forest. My brother said this to me proudly.



Bueno, centrémonos en lo que me ha traído a este post de hoy. Las becadas y la receta y desde luego los hombres de mi familia "cocinando".

Okay, let´s focus on what has brought me to this, today´s post. The woodcocks and the recipe and obviously two men of my family "cooking".

En cualquier caso, sorprendida con el resultado y agradecida por darme "tema" para el post de hoy, aquí pongo la foto del resultado y la receta debajo.

In any case, very surprised I must say with the result,  and thanking them for giving me material for my today´s post, here I´ll show you the birds cooked and the recipe below.

BECADAS EN SALSA - WOODCOCK IN SAUCE
Deliciosa receta Navarra de becadas guisadas en su salsa.
Delicious recipe from Navarra province. Woodcock cooked in their own sauce.

INGREDIENTES PARA QUIEN SABE CUÁNTA GENTE (SUPONGO QUE UNOS 6)
12 becadas
2 tacitas de aceite
3 cebollas picadas
5 zanahorias
14 dientes de ajo
3 cucharadas de harina
2 botellas de vino tinto, bueno
4 onzas de chocolate negro Lindt
12 lonchas de bacon
2 pastillas de concentrado de carne
Sal y pimienta
1 litro y medio de agua
Comprobar la sal al final

INGREDIENTS FOR WHO KNOWS HOW MANY PEOPLE
12 Woodcocks
2 cups of olive oil
3 onions chopped
5 carrots - peeled and chopped
7 cloves of garlic chopped(not very small)
3 tbsp of flour (mainly to thicken the sauce)
3 bottles of a very good red wine
4 onzes of dark chocolate, 70% cocoa
12 rashers of bacon
2 beef bouillon cubes
Salt and pepper
1 litre and a half water (or preferably stock)

PROCEDIMIENTO
Precalentar el horno a 200-220º
Pochar las cebollas, añadir las zanahorias y cocinar lentamente en una cazuela.
Cuando estén doradas, añadir las dos cucharadas de harina. Remover un poco.
Echar el vino en la cazuela junto con el agua, el chocolate, las pastillas de caldo y un poco de sal. Tenerlo a fuego lento.
Mientras tanto, colocar las becadas limpias y peladas (pero con las tripas dentro), en una fuente de horno. Cubrimos cada una de ellas con una loncha de bacon fina.
Poner los dientes de ajo cortados en trozos grandes entre las becadas.
Hornear a 200-220 º durante 15 minutos
Sacarlas del horno y dejarlas reposar 10 minutos o hasta que se enfrían un poco.
Sacarles las tripas y picarlas.
Echar el picado en la cazuela donde tenemos la verdura, el vino y el resto de los ingredientes.
Añadir las becadas a la cazuela y tener cocinando lentamente hasta que esten tiernas. Si se quiere se puede añadir pimienta negra y rectificar el punto de sal.
Cuando ya están hechas, se sacan a una fuente de barro o similar, se pasa la salsa por el pasapurés o por la batidora y se echa por encima. Se reserva hasta el día siguiente.
En el momento de comer, se calienta lentamente.



METHOD
Preheat the oven to 200-220º
Sauté the onions, add the carrots and cook slowly in a big pot.
When they are golden, add the flour, stir a bit.
Pour the wine together with the water, the chocolate, the stock (beef bouillon) and a bit of salt. Cook it in low heat for 20 minutes. Set aside.
In the meantime, set the birds, peeled and cleaned,  on an oven proof tray. Cover each one with a rasher of bacon.
Spread about 7 garlic cloves, chopped , over the birds.
Cook in the oven for 15 minutes.
When time passes, take them out of the oven and leave them resting for 10 minutes or until they´ve cooled a bit.
Take the intestines out (the tripa) and chop it.
Put the intestines chopped,  in the pot with the veggies, the wine and the rest of the ingredients.
Add the birds to the pot, and cook slowly for 20 minutes or until tender. At this point you can add some pepper and check the salt.
When they are done, transfer them to a clay pot or similar,  and process the sauce with a food processor, pouring it over the birds.
This sauce is much better done the previous day (well the whole recipe), so the following day, heat it slowly before eating it.
