PUDDING DE PAN Y MANTEQUILLA {BREAD AND BUTTER PUDDING}

Este postre me encanta. No se si es el pan mojado, la leche con yemas y azúcar que me recuerda a cuando éramos pequeñas y nos daba la amá ese batido, la canela.....no sé, el caso es que después de haber probado varios en Inglaterra, de haber hecho recetas de una amiga Irlandesa que vive aquí, después de haber seguido las instrucciones de una amiga Inglesa, creo que hago uno en medio de todos que se ajusta a lo que a mí me gusta. Ni muy seco ni excesivamente líquido, con bollos brioche en vez de pan normal. Bueno, sigo con la receta que voy a compartir.

I love this dessert. I don´t know if it´s the soaked breads, the milk with the egg yolks and sugar which reminds me about the milkshake my mom used to make for us when we were small, the cinammon....I don´t know, the thing is that after I´ve tried several recipes, some in my London school, another one from an Irish friend who lives here, or from an English friend who lives in London, I think I´ve got my own version. Not too dry or too wet, with brioche buns instead of sliced bread or leftover baguettes. Today, I´m going to share it with you.

PUDDING DE PAN Y MANTEQUILLA - BREAD AND BUTTER PUDDING
INGREDIENTES PARA 6 PERSONAS
12 bollitos brioche
30 gramos de pasas sin semillas - opcional (mi hijo prefiere sin)
Canela en polvo
350 ml de leche entera
50 ml de crema de leche
2 huevos
25 gramos de azúcar
Mantequilla para untar los bollos
Mantequilla para engrasar la bandeja de horno

INGREDIENTS - SERVES 6
12 Brioche buns
30 grams currants - optional (my son prefers without)
Cinnamon powder
350 ml whole milk
50 ml double cream
2 eggs
25 grams sugar
Butter for the buns
Butter to grease the baking dish

PROCEDIMIENTO - METHOD
Engrasar una bandeja de horno con mantequilla

Grease with butter a baking dish


Ir colocando los bollos o el pan (si se elige pan), untados con mantequilla por los dos lados en la fuente de horno. Echar un poco de canela en polvo por encima, unas cuantas pasas y otra vez otra capa de bollitos. Seguir así hasta que hayamos terminado con todo el pan, las pasas y la canela en polvo.

Arrange a layer of buns (or bread if you´re doing so), buttered-side up, in the bottom of the dish, then add a layer of currants. Sprinkle with a little cinnamon, then repeat the layers of bread and currants, sprinkling with cinnamon, until you have used up all of the bread. Finish with a layer of bread, then set aside.


Con cuidado de que no hierva, calentar la leche y la crema.

Gently warm the milk and cream in a pan over a low heat to scalding point. Don't let it boil.


Echar los huevos en un bol y añadir 3/4 partes del azúcar. Batir hasta que cambian de color.


Crack the eggs into a bowl. Add 3/4 of the sugar and whisk until pale.


Añadir la leche y la crema a los huevos batidos con el azúcar. Colarlo si fuera necesario. Echar la mezcla encima de los bollos en la fuente de horno. Espolvorear con el resto del azúcar. Dejarlo reposar durante 30 minutos antes de meterlo en el horno.

Add the warm milk and cream mixture and stir well, then strain the custard into a bowl if neccesary. Pour the custard over the prepared bread layers and sprinkle with the remaining sugar and leave to stand for 30 minutes.



Precalentar el horno a 180º

Preheat the oven to 180º

Hornearlo durante 25 minutos o hasta que los bollos  empiezan a dorarse.

Place the dish into the oven and bake for 25 minutes, or until the custard has set and the top is golden-brown.
